1 lb ground beef
1-1.25oz package taco seasoning mix
1 cup water
1-16oz can refried beans
2- cups uncooked rice
2- cups shreadded chedar cheese
flour tortillas
1- 10.75oz can cream of chicken soup
In large skillet, cook beef over medium heat until no longer pink. Drain and stir in taco seasoning mix and water. Bring to a boil. Reduce heat and simmer uncovered for 5 min. Stir in rice. Cook and stir until liquid is evaporated. Spread aobut 2 tbsp of refried beans, 1/4 cup beef mixture and 1 tbsp of cheese in the center of each tortilla and lay in baking pan.
Combine salsa and soup and pour down the center of the enchiladas. Cook uncovered at 350 deg for 20-25 min unitl cheese is melted.
